BERTA – BREADSTICKS

INGREDIENTS

MOLINI PIVETTI SOFT WHEAT FLOUR  – PROFESSIONAL VIOLA
2.200 GR
salt  40 gr
malted cereal flour 16 gr
extra virgin olive oil 400 gr
water  1.000 gr
active dry yeast 70 gr

PREPARATION:

Put all the ingredients except the salt into the BERTA 15 kneader, start the machine and operate it for 6 minutes. Then add the salt and work until you get a smooth and homogeneous dough. Form small balls of 700 gr each and leave to rest for about 60 minutes at room temperature. Roll the pieces through the roller machine until you get a thickness of 3-4 mm and place them on previously oiled trays.

Grease the surface with oil and cut the dough with a pastry wheel, let leaven at room temperature for about 30 minutes. Cook at 180 degrees for 15/18 minutes.
